My partner, Daryl, and I LOVE spinach. We LOVE peppers. We LOVE garlic. So I though it was about time for our first threeway and NOT that kind!
I wanted to do something different and easy to dress up the standard spinach sauteed in olive oil and garlic. I had the peppers in the fridge already and I LOVE the color and texture they provide any dish. I diced 2 different colored peppers, a half an onion, and I happened to have a lone pear on the counter that I diced as well and thought would add a touch of sweetness to the strong flavor of the organic spinach.
What a great compliment to my blackened cajun talapia!
